Research activities: the research interests of our group are focused on understanding the mechanisms behind sterol oxidation in model systems (i.e. standard mixtures and emulsions), and in food as related to dietary treatments, processing and storage conditions. The group is also interested in assessing the effects of electronic cigarette (e-cig) on sterol oxidation in biological samples from rats exposed to e-cig vaping. The research activity of the group is supported by a wide analytical expertise on method setting-up for the evaluation of sterol oxidation products by conventional (GC-FID, GC/MS, HPLC-ELSD) and innovative fast chromatographic techniques (Fast GC/MS), as well as for the evaluation of lipid composition (i.e. profiling of main lipid classes and fatty acids) and lipid oxidation parameters (i.e. volatile compounds, primary and secondary oxidation products).
